Spaghetti with Spinach Walnut Pesto



I somehow wanted my kids to take in greenleaves and found this ,as the apt way to make them eat the greenies..In the original pesto calls for grinding the greenies raw..which I found uncomfortable with my kids..So tossed it a little and made this as my kids favourite breakfast..
 
It is very easy to make and my kids don't  make me to run at the back to make them complete this spaghetti plate!!

INGREDIENTS:
 
 
250 gms of Wheat Spaghetti
1 Tsp or more of crushed fresh pepper
1 Tsp of Olive oil
Salt to taste
 
To Grind(For the Pesto):
1 Cup of Spinach leaves
1/4 Cup of Walnuts
4-5 Pepper corns
4-5 cloves of garlic
1 Tsp of olive oil
 
PROCEDURE:
 
 
Boil water.Add a drop of olive oil ,salt required for the spaghetti.Put the sphagetti into water and cook for 10-15 minutes. or cook the spagetti as per the instructions given in the pack.
 
 
After the spaghetti gets cooked drain the water and run cold water on it so that they don't get stuck with each other.
In a pan with a drop of olive oil saute the spinach leaves for few seconds
 
Toss the chopped garlic in a pan with a drop of oil.
In the same pan saute the walnuts too for 1 minute.
Cool the mixture .Grind walnuts,garlic first and then add spinach leaves and pepper.
 
 
 
Grind it into smooth paste.Sprinkle water if necessary.
 
In a pan add olive oil and toss the spaghetti.Add salt if necessary.
Then add the grinded paste little by little and toss it nicely so that the paste gets coated all over the spaghetti.
Sprinkle some crushed pepper powder on it if u need it little more spicier.
 
 
 
 
HANDY TIPS:
 
  • U can add parmesan cheese finally if u wish.
  • Add a drop of oil while u cook spaghetti so that it don't get stuck with one another.
  • After cooking the spaghetti wash it with cold water
  • U can add almonds instead of walnuts .
  • First grind the walnuts and garlic and then add spinach leaves so that u get a smooth paste
