Madurai Spicy Chutney/Madurai Kara Chutney


People from Madurai will never deny the fact that roadside shops taste yummy than the high class restaurants.Of course the food served in mess(a small road side hotel)is just awesome.
 
Apart from the aromatic jasmines Madurai is famous for idly and parotta.The chutneys they serve looks very yummy and also tastes so good.

The one i had posted is a medium spiced chutney.If u want more spicier version then add few more red chillies!!

INGREDIENTS:






Serves:3-4

20-25 nos. of shallots/2 big onions(1 big onion to be roasted n grinded and the other one to be chopped finely)
1 no. of big ripen tomato
5-6 nos. of whole dry red chillies(add more if u want it more spicier)
1 Tsp of mustard seeds
2 Tsp of urad dhal
1/2 cup of water
A strand of curry leaves
salt to taste
2 Tbsp of gingelly oil

PROCEDURE:


Add a tsp of oil and saute the onions(Only 1 no. Reserve the other for chopping;if u aare using shallots divide them into twp parts.Use one half for grinding and other half for chopping) till they become pink.Keep the onions aside.
Then in the same pan roast the red chillies.
If u want the dish to be more spicier add 8 chillies.Mine was of medium hotness

Cool the roasted chillies and onions.
Grind chillies and onions to a smooth paste.Keep it aside



Heat 1-2 Tbsp of gingelly oil in a wide pan.
Add mustard seeds and leave it to splutter.
Then add urad dhal and roast it till it becomes brownish in colour.
Then add curry leaves and saute it.
 
 

Add onions(1 no. chopped) and saute it till it becomes pink in colour
Then add tomato and saute it till the mixture gets mashed well.
Add the grinded paste(onion+red chilli) and saute it.
Add 1/2 a cup of water,salt and mix well.
Leave the mixture to boil for few minutes


After few minutes the mixture gets thickened and oil oozes out from the corners.
Now the Madurai spicy chutney is ready to be had with soft Idlies.They taste good with Rotis too.
I loved to have it with curd rice..

This chutney is much spicier than all other chutneys.So balance the number of chillies according to ur taste buds.As this dish is a madurai based one they are used of eating more karam..



HANDY TIPS:





  • Select riped tomato to give a nice taste to the dish.
  • If this chutney turns out very spicy then add a tsp of sugar and equate it.But it will end up in a different taste.
  • 5-6 nos. of chillies will give a medium spicy level.If u are used eating more spicier chutney then add 7-8 chillies.
  • Saute the chutney nicely finally so that it gives a nice look and also nice taste.
  • Instead of small onions big onions can also be used.But usually shallots have nice taste when compared to big onions
  • U can also add  a mixture of green chillies and red chillies.
  • Sesame oil/gingelly oil usually reduces the spicyness and gives a nice taste and aroma to the food.If u don't have sesame oil then u can add any type of oil.
