Thaval Vadai/Thavalai Vadai/Thavil vada (Chettinad Delicacy)


Thaval Vada aka Thavalai vadai is a yummy dhal rice vadai.I was tasting it for the first time and got addicted to it.One of my friend Saradha's mom who is a native of Kovilpatti makes yummy delicious authentic dishes.She came to visit her daughter..Whenever she comes here to tuty ,she passes on yummy dishes to our house too.On her last visit I had been asking her to pass me some yummy and healthy authentic dishes.She remembered it and called me one day to teach me some of the dishes.So nice of her..I adore her love for cooking and a special love for her patience.Even now she keeps trying new recipes!!She had passed many recipes and tips to me which u can find here and there at my blog.Thank U so so much aunty....Just love ur passion!!
 
This Vadai tastes very different from the other vadais.Those who love adai will definitely love this vadai.This snack is of Chettinad delicacy.It is crispy at the top and soft inside.It is rich in protein and it is a perfect  evening snack for the kids.They are easy to make as the shape is not important for this type of Vadai.Whatever shape u make it will taste yummy.Have it super hot...then u will super like the snack

INGREDIENTS:

Preparation time:1 hr for soaking
Cooking time:5 minutes
Serves:15 Vadai

TO SOAK AND GRIND:
1/2 Cup of Thuvar Dhal/Thoor Dhal
1/2 Cup of Channa Dhal/Kadalai Paruppu
1/2 Cup of Urad Dhal
1/4 Cup of Pasi Paruppu(peeled green gram)
1/2 Cup of Par Boiled rice
1/2 Cup of raw rice
5-6 nos of dry Red chillies

Salt to taste
A generous pinch of Asafoetida
1/4 Cup Soaked green gram
Handful of finely chopped coconut
2 Nos. of green chillies (Chopped in circular shape)
2 strands of Curry leaves
1 tbsp of ginger chopped finely(Don't grate it)
Oil to deep fry

For tempering:
1-2 tsp of oil
2 -3 Tsp of mustard seeds
2 Tsp of urad dhal

PROCEDURE:



Soak Dhal,rice,red chillies for 1 hour.
Then grind the soaked rice and dhal mixture,red chillies along with salt and asafoetida.
Grind it in the thick consistency similiar to Adai.Don't grind it very smooth
To it add chopped green chillies,curry leaves,chopped ginger,chopped coconut,1/4 Cup of soaked green gram and mix well.This portion of green gram is added to give nice crunchy and crispy outer layer..
 
Heat a tadka pan and add oil.Once the oil gets heated add mustard seeds.Let it crackle.Then add urad dhal.
Add this tempered one to the grinded mixture and mix well.

Heat oil in a pan.
Take a portion of the thick batter .Press it on the palm and drop it into oil.Deep fry it and serve it hot with hot coffee.
 
 
 
 
Handy Tips:

  • Don't grind the batter smooth.Let it be in the adai consistency
  • The shape of the vadai doesn't matter.
  • Add chopped ginger and not grated ginger because it might alter the taste.
  • Add 1/4 of the soaked green gram finally to give a crispy taste to vada
  • I love to have it with Rasam Sadham
  • Don't soak the dhal-rice mixture for long hours
