Beetroot Rice




My girls love pink colour.They want everything to be in Pink.And this is the only reason why they love to have beetroot.I had already posted Pink Poori which is my gals favourite breakfast..So wanted to try a rice recipe too with this vegetable and in this regard here comes the pink rice or the Beetroot rice.They are very apt to pack for lunch box.

INGREDIENTS:
 

Serves:3

2 Cups of cooked rice
1 No. of Big Beetroot,peeled n grated
2 Tbsp of chopped onions
1 Garlic pod chopped finely(Optional)
1-2 No. of green chillies,Sliced and deseeded
1 Tbsp of Cashewnuts
1 Tbsp of groundnuts
Few curry leaves(Optional)
Salt to taste
1 Tsp of fennel seeds/saunf/Sombu
1 Tbsp of ghee/Oil






PROCEDURE:



Peel the Beetroot.Cut it into medium sized big cubes.
Boil water and cook the beetroot.Don't cook it too much too.


Chop the onions and keep it aside.
Grate the cooked beetroot and keep it aside.
Heat oil in the pan and fry the cashewnuts and groundnuts.


Keep the fried cashews and groundnuts aside.
In the same pan add oil.
When it gets heated add fennel seeds/saunf/Sombu.
Then add curry leaves.


Then add sliced green chillies.
Add chopped onions and saute it.
Add grated beetroot and saute it till the mixture becomes dry.


Switch off the flame.
To it add cashewnuts and groundnuts.
Add the cooked rice.
Add salt.Mix well.
Serve it with fried appalams or vadams.

HANDY TIPS:



  • Cook the rice in a way that the grains don't get stick.To enable to get it cooked in that way add a drop of oil when u cook the rice.
  • U can do many variations in this by adding garam masala,tempering it with cinnamon etc.
  • Don't cook the beetroot too much.
  • Fennel and beetroot goes well.So don't omit the fennel part.
