Instant Sambhar/Thanni Sambhar



Dosa- sambar is an exotic combination.I always love to have dosas soaked in sambar.Still I remember the days when we use to finish off the lunch boxes of the day scholar students.My love for the dosa-sambhar combination started during my college days where one of my friend used to bring dosa soaked in sambhar for her lunch.They taste heavenly even though they are not hot.They tasted to me like a sambhar creped cake when had with a spoon...
 
The recipe that I had mentioned doesn't call for any special sambhar masala...The consistency is little bit thin..It is easy to make and delicious to have..

INGREDIENTS:
 
1 Cup of cooked Thoor dhal
1 no of big onion(Chopped finely)
1 no of medium sized tomato
2-3 pods of garlic
1 No. of green chilli(slitted vertically)
1/2 Tbsp of red chilli powder
1 Tbsp of Coriander powder
Salt to taste
1/4 Tsp of Turmeric powder
Chopped Coriander leaves to garnish
1/4 Tsp of Fenugreek seeds powder/Vendhiya Powder
 
For tempering:
 
1 Tbsp of oil
1 Tsp of Mustard seeds
1/2 tsp of cumin seeds/Jeera
A pinch of asafoetida/Hing
1 strand of curry leaves
1 Tsp of Urad Dhal
1-2 dry red chillies(broken into half)
 
PROCEDURE:
 
 
 
Chop the onions and tomatoes and keep it aside
Pressure cook the Thoor Dhal with turmeric rice,garlic pods and a drop of oil till it gets cooked well.
Mash the thoor dhal with a hand masher
 
 
 
Heat oil in a pan.
When the oil is getting heated add items mentioned in For tempering list one by one.First mustard seeds,urad dhal,Jeera,red chillies,hing and finally the curry leaves.
 
After tempering add chopped onions saute it.Add green chillies and saute it
Then add chopped tomatoes and saute it till it gets smashed well.
Add chilli powder,coriander powder and saute it along with tomatoes
 
 
When the tomatoes and onions get smashed well  and the raw smell of the powder goes off add  mashed dal to the pan.
Add water to the mixture .Add salt and allow the mixture to boil for sometime.
 
Switch off the flame.Then add methi powder and mix well.
Garnish with coriander leaves and serve it with dosa.
 
 
HANDY TIPS:
 
  • Add methi powder after switching off the flame.don't add it when the flame is on.Sambhar will taste bitter if u add when the flame is on.Don't add too much of methi powder too.
  • Instead of thoor dhal,Moong dhal can also be added.
  • U can skip the addition of coriander and chilli powder.Instead can increase the number of red chillies used for tempering
  • Onions can be sliced lengthwise too.That will give u a different flavour
