Mutton Chukka Varuval...Madurai Muniyandi Vilas Special....

Few days back HH's friends visited our home..HH wanted me to make some non vegetarian dishes for them especially mutton.I hardly cook/eat mutton and this is the first time I am trying a sidedish out of mutton.Earlier I had posted mutton Kola Urundai which was my first attempt in making some starters out of lamb..

There are various methods in making this dry fry by changing the ingredients.I made this dish very simple by excluding the addition of grinded masala...

This is an easy dish to make and the taste is exotic with Rasam Rice/Sambhar rice..

Simple Egg curry

This dish comes in handy when I run out of vegetables. They taste exotic with a simple rasam sadham..After transferring the dish to the serving bowl, don't forget to add some rice to the pan in which u had cooked, mix with the gravy left in the pan..Just have the mixed rice....We refer it as Vanali sadham (The pan in which it is cooked is called Vanali)It is the most delicious food I can say...Don't miss it...

This is a simple sidedish that can be made in a jiffy...

Chettinad Meen Varuval(Pomfret fry)

Being in Tuticorin the only advantage that I have is to enjoy fresh seafoods..We get all kinds of seafoods that too fresh..I started tasting this pomfret only after coming to Tuticorin. The white pomfrets are too tasty than the black ones..The taste is unexplainable. It goes very well with a simple rasam  /  Tomato RasamPepper Rasam or a sambar sadham.

The one that is mentioned below is chettinad style of frying the fish

Mutton Kola Urundai-Madurai Kumar Mess Special

I had heard a lot about kola urundai but didn't have any chance to taste it.Moreover I don't like mutton and I hardly cook mutton at home too..Last week we went to Madurai Philatelic Bureau(This is all time great Obsession from my childhood!!)to collect the new philatelic stamps..We had our lunch at Kumar Mess-a famous non vegetarian hotel in Madurai which serves many exotic chettinad varieties.

By compulsion of the one who served,I happened to taste the kola urundai...To my surprise I had 3 pieces and Hari was surprised to see me eating Mutton Kola Urundai (I don't like mutton!!)The balls didn't have a drop of oil in it..though it was deep fried!!!

I just felt in love with the Kumar mess Kola Urundai.I came home but still cannot forget the taste.
I kept browsing many blogs, but finally followed Solai Achi's recipe and made these balls. What a surprise!!!It tasted similar to that of the ones which I had tasted at the Kumar mess.It was a super hit and passed a few balls to my friends..Even they were much taken back by the exotic taste of the balls..

So do try it and U will then say kola urundais are much easier to make..
Just stick on to the ingredients..Don't do any changes..Do as I did..I strictly followed Solai Achi's recipe..

Salem Shredded Chicken Fry/ Salem Pichi Potta Kozhi Varuval

Mettur is my favourite town till today...I had been there at this place for more than 5 years.Though the town is very small, the ambience and the climate makes one to love the place. We were staying inside HH's company township which had complete facilities in all respect inside. From the house terrace we can see the stanley reservoir and the river cauvery....Free electricity and free water and also consistent supply..What else u need other than these ??!!!

It was a practice for us to visit salem every weekend for some reason or other. We loved to dine at Selvi Mess a famous place for the non-vegetarian items..One of my friend at Salem introduced me this dish which she called Pichi Potta kozhi varuval (in tamil) which means shredded chicken fry.I was tasting it for the first time and it was very light to have and was tasting very different!!

I always make this and use it for the rotis, rice, oothapams and also for making chicken fried rice..Kids will surely love to have this as this is less spicier than the other chicken dishes!!

Chettinad Pepper Chicken

Pepper and chicken go very well with each other. They give an exotic flavour and taste to the dish.I had been there to my parent's home last month for the vacation and thought I should try some non-vegetarian recipes..For the non-vegetarian recipes I always follow solai achi's blog..Similarly even this time I borrowed the recipe from her and tried it.It came out too well that I cannot describe..

It tasted nearly similar to that of Anjappar Restaurant's Pepper chicken..

Murgh Makhani/Butter Chicken

This is one of the restaurant special dish.I never thought I could make this at home. After starting this blog I had almost stopped having food outside..I had modified the dish keeping the health aspect in mind.I had minimised the butter and cream quantity. But once in a while, u can relish your taste buds with this dish .

This dish is strictly a party dish.So it calls for more butter and cream. It is buttery, creamy and also yummy. It is a rich regal Dish.

The dish is said to be originated in a restaurant called Moti Mahal,Delhi. The origins of butter chicken can be traced back to a man named"Kundan Lal Gujral" who ran this moti mahal,Peshawar before the partition of India. With the partition the restaurant moved to New Delhi"-(Source:Wiki)

Ambur Chicken Biriyani/Dum Biriyani (Sunday Special)

This is a very HOT post. Most of my friends had been asking me to post a non-veg biriyani recipe.I was lazy enough to cook the biriyani...I cooked it this morning and just loved the way it had turned out.I could not resist from posting the recipe.I didn't take any special efforts too to bring in some props for the photo session.I felt Biriyani itself is special and it doesn't need extra photo buildups!;-)

Briyani-s are always special.S and Y's  school is closed for winter vacation till Pongal. It's always nice to spend time with kids.Today we had invited newly married couple to our home for lunch .Since it was vacation I thought of serving them an elaborate lunch and also I had ample time at preparing the dishes!!

I was breaking up my small brain for the menu list!!Atlast I thought of making chicken biriyani..There are various styles of preparing the biriyani.Being a native of vellore which is few km from Ambur...I am great fan of Ambur biriyani..Star Biriyani Hotel at Ambur serves very delicious biriyani. There are slight additions and deletions that has to be done when compared to the pressure cooked biriyani.
I googled for the ambur biriyani and got a video which described the preparation of the biriyani.I just followed it ..The recipe is explained by the owner of the star Biriyani Hotel-Ambur.

They had explained for mutton. As my kids don't take mutton I had replaced it with chicken.
Usage of Seeraga Samba Rice (Instead of basmathi-which is slow in digestion),lower spice quantity ,no green chillies  is the speciality of this Ambur biriyani. It doesn't cause any indigestion problems!!

Chala Meen Kulambu/Chala fish Curry (No coconut)

Fish is a rich source of Protein and Omega B.The taste of the sea fish differs that from the river fish.I had tasted both the varieties.Being at Mettur for 4 years I tasted variety of river fishes. Now being at Tuticorin which is famous for its sea foods I had been tasting fresh Sea fishes. One among them is the simple Chala Meen(In english it is named Sardine). It is less expensive and also easily available. The taste is too good and simple.
My mother makes delicious fish curries. Most of my friends who had visited my house will agree upon this.It tastes as if she had added ghee...So I usually call it as Nei Meen Kulambu(Ghee fish Curry).
We make it in the evening ,keep it aside and eat it in the next afternoon. It tastes too good after a day. That is why there is a famous song in tamil movie which says"Nethu Vacha Meen Kulambu ennai izhukuthadi".
The curry tasted good with hot steamed rice and also with the hot steamed idlis..
Here is the recipe..
