Madurai Spicy Chutney/Madurai Kara Chutney


People from Madurai will never deny the fact that roadside shops taste yummy than the high class restaurants.Of course the food served in mess(a small road side hotel)is just awesome.
 
Apart from the aromatic jasmines Madurai is famous for idly and parotta.The chutneys they serve looks very yummy and also tastes so good.
When u visit Madurai don't miss to have Jigirthanda from Famous Jigirthanda shop!!
The one i had posted is a medium spiced chutney.If u want more spicier version then add few more red chillies!!

Easy Kara Kuzhambu/Vellai Poondu Vengaya Kuzhambu



This is the first gravy dish I learnt after my marriage.Though the procedure is very short the balance of tamarind and chilli powder plays the important role at bringing out the taste.This dish is commonly made in all families and each one call by their own common name.Some refer it as Easy Kara Kuzhambu,some as vellai poondu Vengayam Kuzhambu and some as sunda kuzhambu..
 
With minimal ingredients this dish can be made and the taste is exotic..With a simple appalam u can just have a feast.Additionally this kuzhambu stays well for more than 2 days too, when refrigerated..
 
With slight variations and addition of masalas, the same kuzhambu can be made in many different tastes..
 
Anyone who is new to the kitchen can start trying this dish...

Paneer Do Pyaza-Restaurant style



As the name indicates the dish calls for twice the amount of onion..Do means two and Pyaza means onion in hindi..My kids love paneer in any form.The dish can be either gravy or a dry one..it merely depends on ur wish and taste..I love to have it semi gravy.
 
People who love onions will love this dish and it goes well with Roti or a simple pulao.

Kara Chutney(Saravana Bhavan Style)


 
 
 
 
The one that I like at Saravana Bhavan is the chutneys that they serve along with Idly/Dosa.I had been missing saravana bhavan since I shifted to Tuticorin.But luckily an year back Saravana bhavan opened a branch(they should have heard my prayers;-) ) at Punnai Nagar(1/2 an hour drive from Tuticorin).This place is the native village of the owner of Saravana Bhavan group...Apart from it he had also built a nice (and also neat!!) Perumal temple nearby which always offers some type of prasadam to all the devotees ..It is also nearer to Tiruchendhur...Sometimes, on weekends we make a drive to this hotel ....of course, to taste the chutney!!On that particular day there was very less people at the restaurant ...being a regular customer to this restaurant I requested the  recipe of the red chutney from the chef who came out for a break!!!He was in great thought whether to tell or not..May be I was lucky on that day he gave a quick n brief procedure of this chutney!!!I returned back home and made it the very next day(or else I will forget the recipe)and to my surprise it tasted the same..From then on No saravana Bhavan visits!!!
 
This chutney goes well with hot steamed Idlies and Dosa.It gives a colourful combination when it is served with Idly along with white chutney(coconut),green Chutney(mint) and red chutney(Kara chutney)..Of course u can teach the colours to ur playschool kid!!
