This is the dish which my mom used to make when she runs out of vegetables..I always like the simple taste of this sambhar.The added drumstick leaves impart an additional smell and taste to this dish..
So try this simple sambhar and you will appreciate the taste drumstick leaves imparts to sambhar
INGREDIENTS:
**Drumstick Leaves Sambhar **
Serves: 3
1/4 Cup of Toor Dhal/Tuvar Dhal
2-3 Garlic pods
A drop of oil (to add while pressure cooking dhal)
10-15 nos of Shallots/Small onions,chopped
1 No. of Ripen tomato,medium size,chopped
1/3 Cup of Drumstick leaves (Cleaned)
1 Tbsp of Sambhar Powder
Small gooseberry sized tamarind soaked in 1/4 cup of water
1/8 Tsp of Methi powder/Vendiya Powder
Salt
For Tempering:
1 Tbsp of oil
1 Tsp of Mustard seeds
1 Tsp of Urad Dhal
A pinch of Hing
1-2 Nos. of dry red chillies
THIS IS HOW I MADE IT ...
Pressure cook Tuvar/Thoor dhal in a pressure cooker by adding 1/4 Tsp of turmeric powder and a drop of oil.You can also add few garlic pods too.
Pressure cook it till the dal gets cooked well.Mash it and keep it aside
Chop small onions(or you can use it as a whole without chopping) and tomatoes.Keep it aside.
In a pan add oil and heat it.
Then add items mentioned in "For Tempering" list in the ingredients.
Add chopped onions and saute it till it becomes translucent.
Then add chopped tomatoes and saute it.
Add Sambar powder or Chilli powder+Coriander powder.Saute it carefully without burning it.
Add cooked and mashed thuvar dhal and bring it to boil.If needed u can add water.
Add salt and mix it well.
Add Tamarind water and bring it to one boil.
Finally switch off the flame and add cleaned and washed drumstick leaves to the sambar.Close it and keep it.The heat that is in the pan is more than enough for the leaves to get cooked.
After 10 minutes add Fenugreek powder (Vendhyam powder/Methi powder) by keeping the flame off.Give a quick stir.
Serve it with hot steamed rice and Potato curry.They taste so heavenly
HANDY TIPS:
- Never pluck drumstick leaves after the rain .It will give a bitter taste.
- While adding methi powder make sure that you had switched off the flame.If u do it when the flame is on the sambar will become bitter.
- Don't add too much of leaves too.It will then become Kootu!!
- Instead of thoor dhal u can use Pasi paruppu/Moong dhal or a mixture of both.
- Instead of Sambhar powder u can add a mixture of Chilli powder and Coriander powder too
