Carrot Burfi



Carrot is my kid's favourite veggie...My 2 little bunnies at home love to munch them in all forms..When Jeyashri posted the carrot burfi in her blog I was tempted to make this burfi at home.Made it and was a super hit with my friends too...
 



INGREDIENTS:

1 Cup of Grated Carrot
1/4 Cup of Milk
1/4 of Ghee
1 Cup of Granulated Sugar
1/2 Cup  and 2 Tbsp of Besan
Pistas to garnish
A pinch of Cardamom powder

PROCEDURE:
 
 
 
 
Peel the skin of carrots and grate them.
Grind them.
 
 
 
 
Add milk and grind them into smooth paste.


Sieve the besan/Kadalai Maavu/Gram flour to avoid the lumps.Keep it aside
Grease a plate with ghee and keep it aside.



In a wide pan add grinded carrot,sugar and besan flour.
Heat it in low flame.
Mix them well.
Sugar will start melting and the contents will start to mix with each other.



Add ghee in regular intervals and keep stirring it well and continously so that it doesn't get burned.
Then add cardamom powder and mix well.
At one point after 15-20 minutes the mixture will become thick.


When it forms a thick mass and leaves off from the pan transfer them to the greased plate.


Level them with a greased spoon.
Add grated pistachios on top to garnish them
When it is little warm cut them into square shapes.
Allow them to cool.


Store them in an air tight container..

HANDY TIPS:





  • Don't add more of carrot (more than 1 Cup).U will not end up in a burfi
  • If u cannot cut the slices after pouring the mixture to the greased plate then again heat the mixture for few minutes and try making slices
  • If u heat it for much more time then the burfi will become more chewy.
