Aloo Gobi Masala

I regularly watch Vijay Tv's Samayal Samayal by Venkatesh Bhatt which is being telecasted weekly once. I loved all his recipes especially the North Indian Dishes. Hence I decided to start a new series on Venkatesh Bhatt recipes. My first post on this genre is the Aloo Gobi   Masala.
 Aloo Gobi Masala is an excellent combo to have with Roti or Phulka. It can also be had with Pulao. It is very simple to make and the taste is just awesome.


 
What do u need to make this dish...
 
150 gms of Cauliflower florets ( Boiled )
2 Nos. of Medium Sized Potato (boiled and diced)
2 Nos. of Green Chilli
1 Tsp of Kasoori Methi (Dried Fenugreek Leaves)
3-4 Tbsp of Finely chopped Onions
2 Nos. of Tomato chopped finely
1-2 Tsp of Ginger Garlic paste
1 Tsp of Red Chilli Powder ( Kashmiri Chilli works out good)
1/4 Tsp of Turmeric Powder
1/2 Tsp of Jeera Powder
1/4 Tsp of Garam Masala Powder
1/2 Tsp of Jeera
Oil
Salt as required
 
 
 
This is how I made it :
 
 

 
 
 Boil cauliflower and potatoes separately by adding little turmeric powder.
Dice the boiled potatoes .
Heat oil and flash fry the potatoes and cauliflower for 1 minute. It is just to coat a layer of crispness over the veggies .

 
 
Soak the Kasoori Methi by adding little water.Keep it aside
Take a wide pan. Add 1 Tbsp of oil.Add jeera ,then add sliced onion and sauté it for some time.



 Then add ginger garlic paste and green chillies .sauté it till the raw smell of ginger garlic paste goes off.
Add finely chopped tomatoes and sauté it till it becomes mushy .Add turmeric powder.
 
 
Add Chilli powder,Garam masala powder,jeera powder and sauté for few seconds.
 
 
Add little water and allow it to boil till the raw smell of the powders goes off.
Then add required amount of salt.
 
 
Add the flash fried potatoes and cauliflower. Saute and toss it for some time.
Then add the soaked kasoori methi ( after squeezing out the water) and sauté it for few seconds.
The dish is ready to be served with Roti,Phulka or Pulao.
