Tutti Fruite Cake



It is almost after a month I am switching on my oven...I baked these Tutti Frutti cake yesterday.My younger daughter Y had Rainbow day last week at her school.So she wanted me to make a cake  with all the colours of Tutti frutti in it.

Browsed the recipe from Sailu's kitchen and baked it.Its nice to breathe in the nice aroma when they are getting baked.

The taste was the best I could say that I was left with an empty plate with little remains of the cake..My kids loved to have it..

Just try this recipe by strictly following the instructions..

INGREDIENTS:

Makes:10 pieces

Baking time:35-40 minutes
Baking temperature:175 degrees C/

2 Cups of All purpose flour/maida
1 and 1/4 Cups of granulated sugar
1/2 Cup of Milk,Boiled n cooled
2 nos of eggs at room temperature
1/2 cup of unsalted butter
1/2 cup of Tutti Frutti
2 tsp of Baking Powder
1/2 Tsp of Baking Soda/Cooking Soda
2 Tsp of Pineapple essence/Vanilla Essence





PROCEDURE:




Sieve Maida,baking Powder and baking soda together for 3-4 times so that they are get mixed evenly.
Keep it aside.
Powder the granulated sugar into nice powder.
Keep it aside.



In a mixing bowl add Butter and powdered sugar.Cream it till it becomes smooth and creamy.Sugar should have melted and combined with the butter.Use beater to quicken the process.



In the mean while take the Tutti frutti in a flat plate and see to it that they remain apart from each other.Spread it ..
Sprinkle some maida over the tutti frutties .
Coat the maida evenly all over the tutti fruttis.
This is to avoid the tutti frutties settling down the cake batter.
Keep it aside.

In the meanwhile preheat the oven for 10 minutes at 175 degrees C

To the creamed butter and sugar mixture add one egg and beat it.


Then add another egg and beat it nicely.Finally add Vanilla essence and beat it till everything combine well.
Then add flour in three additions alternating it with milk.
i.e)Divide maida into 3 portions and also milk into 3 portions
That is first add a portion of maida and gently fold the mixture.Then add milk and fold the mixture using a spatula.Likewise add all the three portions of milk and maida.
Dont use Beater to do this process.



Add the maida coated tutti frutti to the mixture and gently fold the mixture.
Grease the loaf tin with butter and maida.U can also use any type of cake pan.I used a Loaf Tin to bake my cake.
Pour the batter to the greased  and floured tin.
Bake it at 175 degrees for 40-45 minutes.It took 42 minutes for my cake to get baked.



 The timing may vary according to the oven capacity.First u bake it for 30 minutes and keep checking every 5-10 minutes after 30 minutes with the skewer.bake it till the skewer comes out clean.

After baking allow it to cool for 15 minutes.Then slice them into pieces and relish it.

I divided the batter and made a few cup cakes with this batter for my sweetie pie..











HANDY TIPS:



  • Grind the sugar granules into nice powder
  • Bring the eggs to room temperature and then use it.Or else the cake will not come out well.
  • Let all the ingredients be at room temperature when u use it.
  • Add eggs one by one and not both of them at a time.
  • Don't use hot milk .Use only boiled n cooled one.
  • Coat the tutti fruite with maida which will avoid the fruits settling down during baking.
  • U can also replace eggs with 1/2 tin of condensed milk(200 gms) and increase milk by 1/4 cup(totally 3/4 cups of milk).
  • If the crust is getting darker and crusty then remove the pan half way through and place aluminium foil on top and continue the baking process.
  • Instead of Vanilla essence u can use pineapple essence too to get rid the smell of the eggs.
  • 1 Cup of flour is about 140 gms
  • Place the baking pan in the middle rack of the oven
  • U can also replace butter with oil
