Ghee Rice/Nei Choru


 
 
On the other day I made fresh homemade ghee from the butter. The whole house was filled with the aroma of clarified ghee. Next day being a sunday I preferred to make ghee rice with a non-vegetarian  kurma  and a simple curd rice. Its hot here and could not spend much time in the kitchen.
Nei Choru/Ghee rice is the one which my kids love eating.It is very easy to make and also it goes well with any hot spicy curry.It has strong flavour of ghee and it is rich in raisins and cashewnuts.The aroma of the rice is very strong in ghee and it is a bland rice which nil spicyness.

PROCEDURE:
 
 
Soak the basmathi rice atleast for ½ an hour.Then drain the water.Keep it aside
Boil 1 ½ cups of water (for 1 Cup of Basmathi Rice).
 

In a heavy bottomed pan add a 1tbsp of ghee and fry cashews and raisins. Keep them aside.
Then fry the onions (sliced lengthwise) till it turns brown and keep it aside.
 
In the same pan add 2 more tbsp of ghee and heat it.Then add cinnamon,cloves,bay leaf,cardamom and sauté it.Then add the soaked and drained rice and sauté it so that ghee gets coated on all over the rice grains.
Then add the hot water(that is boiled in a separate pan),salt and mix well.
 
 
Then close the lid and cook the rice in low flame for 10-12 minutes or till the rice is done.
 
Garnish with fried cashewnuts,raisins and onions.
 
Have it hot with Chicken curry or a vegetarian kurma.
 

 

 
 
 
HANDY TIPS:
 
  • Soak the rice atleast for 1/2 an hour.Or else it will take more time and water to cook.
  • U can use coconut milk instead of plain water.
  • Some add a tsp of ginger garlic paste while sauting.
  • If u want some spicyness then u can add few green chillies.
