SnowBall Cookies/Melting moments (EGGLESS)



This post was lying at my folder for months..Now I felt it is the apt time to post it for my dear friend..Yes today is my friend's Bday and would love to give her a virtual treat.Gaju..This post is for u...Wishing u a very very happy Bday dear!!
 
This is the easiest cookies that I had ever made and it tastes so yummy that with little ease u could make yummy cookies.Like the name, the cookies just melt into ur mouth..It tastes similiar to that of mexican wedding cookies but ofcourse there are differences between both the types.They can be stored well upto 2 weeks too.I always love the naankhatai type of one that is sold at Indian bakeries especially the ones from Iyengar bakeries ..
 
They are so soft and after learning to make these cookies I seldom get biscuits/cookies from shops.My kids just love to have these cookies.Infact I made some earlier which my children finished it off without leaving for me to take a shot for the blogpost..I again made it yesterday and virtually treated my friend with these cookies..

INGREDIENTS:
 
Recipe Reference:Joy of Baking
Makes around 40 cookies
 
1 and 1/2 cups of All purpose flour/Maida
1/2 cup of Corn flour
1/4 Tsp of Salt
1/4 cup of Powdered sugar
1 Cup of Unsalted Butter
1 Tsp of Vanilla Essense
3 Tbsp of finely chopped cashewnuts n walnuts
 
For the topping:
1/4 to 1/2 Cup of Icing Sugar for dusting on the top of cookies
 
PROCEDURE:

 
 
Sieve/Whisk Maida,Cornflour,salt.Keep it aside
In a bowl add butter(at room temperature),powdered sugar,vanilla essense.Beat it nicely till creamy consistency is obtained.
 
 
 
To it add the whisked maida n cornflour mixture and mix well.
Add chopped nuts to it and mix well and bring it to the consistency of a dough.Don't knead it to much.Do it gently.If the mixture is dry and not coming together then add few drops of milk to it
Wrap it and refrigerate it for 15-20 minutes.This is to make the dough turn little firm
 
 
 
Preheat the oven at 177 degrees C(350 degrees F) for 10 minutes.
Keep a butter paper on the tray and make it ready.(I didn't use it as I was running short of it.I just applied butter and then dusted maida on it to avoid the cookies getting stuck to the tray)
Take a small pinch of say a marble size and roll it like a ball.Then just flatten it lightly.Don't make it very flat.(Just like making paruppu Vada!!!)
 
Line them on the tray.
Bake them at 177 degrees C(350 degrees F) for 15-20 minutes.The base of the cookie should turn brown..
 
Remove it from the tray .Line them on a plate.Just sieve the icing sugar on the cookies.Alternatively u can also roll them on icing sugar.I dusted icing sugar using a tea filter.
 
Cool them and store it in an air tight container for 2-3 weeks.
Enjoy this melting moments with hot Tea.
 
 
HANDY TIPS
 
  • Instead of powdered sugar u can also use icing sugar for making the cookies.
  • Instead of Icing sugar, powdered sugar can also be used for topping the cookies.
  • Instead of dusting the icing sugar on the cookies,cookies can be rolled over the sugar.
  • Do the topping/Rolling of icing sugar when the cookies are warm.Or else sugar will not stick on the cookies
  • Use unsalted butter
  • Don't knead the dough.Mix it gently.
  • Don't refrigerate for long hours.Then the dough turns too firm and need to wait till it turns little loose.
  • U can add few drops of milk for putting the mixture together.
  • The top will not turn brown.It will remain the same colour.So check for the base colour alone.
  • The oven timings differ according to the oven make and so keep having an eye after 15 minutes and adjust the time accordingly
  • Chopped nuts gives a  nice crunchy taste to the biscuit.U can either use cashews or walnuts or combined.
