Mushroom Biriyani



Mushrooms are my favourite as they serve as an alternate for the non vegs...They are very rich protein suppliers with zero percent cholesterol..So my choice is always mushroom when compared to the non-veg items...




Ingredients:

Mushroom                               1 Pkt
Big Onion                                 2
Riped Tomato                         2
Ginger Garlic Paste                1 Tbsp
Rice(Seeraga samba)             1 Cup
Mint Leaves                            Handful
Coriander Leaves                  Handful
Red ChilliPowder                  2 Tsp
Cumin/Jeera powder           2 Tsp
 Hot Water                           1  1/2 cups
Thick Curd(Yogurt)            2 Tbsp
Salt as required

To Temper
Oil                                     3 Tbsp
Ghee                                 1 Tbsp
Clove                               3-4 pieces
Cinnamon                       a small piece
Bay Leaf                          2

To garnish
Coriander leaves
Sliced fried onions
Fried Cashewnuts

Cleaning of mushrooms:


  • To a bowl of water add 1/2  tsp lemon juice
  • Add the mushrooms to it and soak it for 5 minutes
  • Then Hand rub the mushrooms keeping it in water .you can get rid the black particles on it

Methodology:


  • In a pan add oil,ghee.To it add the items to temper
  • Add sliced onions and saute well(more browner the onion more tastier the food)
  • To it add Ginger garlic paste and saute well.
  • Add tomato,mint leaves and coriander leaves and saute the mixture
  • To it add the sliced mushrooms,Jeera powder,Red Chilli Powder and saute well till all the added ingredients become a gravy like appearance
  • To it add the rice(soaked for 15 minutes and later drained) and mix well
  • After stirring for 2-3 min add boiling water to it and finally the curd
  • Add the required amount of salt
  • Stir well and pressure cook it for 1 whistle or for 5-8 minutes
  • Finally garnish it with coriander leaves,fried cashews and fried onions
  • Serve it with onion raita and Vadams.

  2. Hi Amudha, I tried this recipe. Instead of mushroom, I used soy beans as I dint have mushroom in hand....wow, it came out so good!! I guess the jeera powder does the trick.....along with mint. The taste was very much authentic. Please post a recipe for chicken biryani....thanks!
